PSTO Catanduanes, DOST-ITDI conduct Coco Water Vinegar production training for LGU Bagamanoc

On August 9-11, 2022, DOST V thru PSTC Catanduanes conducted Training cum production of Coco Water Vinegar utilizing DOST ITDI's Accelerated Vinegar Processing Technology to members of Bagamanoc Fish Shelter Association, coconut farmers, and other associations. The activity is in collaboration with LGU Bagamanoc headed by Hon. Odilon Pascua and Mr. Emmanuel De Leon, Municipal Agriculturist.

The 3-day training equipped both PSTC Catanduanes staff and the participants with the right and accelerated process of fermenting coco water and vinegar production. Engr. Ma. Fe Ordiales-SRS II and Engr. Benjamin Santos-SRTIII from DOST-ITDI Engineering section have shared their expertise on the use and benefits of using Vinegar Acetator. Through the DOST ITDI Vinegar Processing Technology, this will help improve the quality of vinegar in the Municipality of Bagamanoc and will surely utilize coco water from copra meat processing which could provide additional income to farmers and the associations.

The DOST ITDI Experts conducted the following activity: (1) Introduction of Vinegar Processing Technology, its background and function, installation, operation, and maintenance. (2) Steps in Preparation of Alcoholic Liquor (3) Introduction to Pearson Square as part of the computation of ratio of sugar in the vinegar solution (3) Importance and actual Titration (4) Cost Benefit Analysis of Vinegar production utilizing Coco water.

A total of 19 participants from different associations attended the said training.
